
Replaces the CIEH Advanced Certificate in Food Safety. The CIEH Level 4 Award in Food Safety in Catering is designed for those with responsibility for the management of food operations. This course is suitable for production managers, trainers, owners or managers of food businesses, supervisors with Level 3 Food Safety knowledge, hygiene personnel and hygiene auditors. It is strongly recommended that candidates have previously successfully completed both the Level 2 and Level 3 Awards in Food Safety (or equivalent). Successful candidates will be able to guide and advise on the management of food hygiene in a wide variety of food businesses, identify areas for legal compliance, determine good practice, design an improvement plan, outline a HACCP type study, liaise with enforcement officers and deliver Level 2 Food Safety Award training (with appropriate training skills). This course will be assessed by the submission of two workplace assignments and a 21⁄2 hour written examination.
